I love ice cream, I’m not going to lie. Even though I’m dairy intolerent I still can’t live without ice cream, which is why I’ve taken it upon myself to start finding dairy free alternatives. Unlike the high prices that are attached to shop brought ice cream, I’m going to make mine with a little less cost and packed full of flavour. This strawberry ice cream is just what you need!
I’m going to be making so many flavours this summer your heads going to spin! 2018 heat waves are in full effect and I need something to cool me down so I stop melting for five minutes. I love this recipe because it’s super easy to make and takes no time at all, in fact the longest part is waiting for it to freeze before you can enjoy.
We are working with frozen products in this one though so you’re going to need a pretty good blender, we ended up throwing our last one away because it just wasn’t up to scratch and we got ourselves a brand new one. They don’t have to be expensive, just make sure they get the job done!
Remember if you are wanting to make even more just double the ingreidents, I have to say this ice cream is amazing with some naughty sauce drizzled over it and some fresh strawberries to go with! This has to be a summer favourite of mine, the strawberry ice cream is to die for with the heat becoming unbearable in the UK it’s great to sit back and enjoy a nice bowl of home made ice cream!
- 2 big frozen bananas
- 340G frozen strawberries
- 2 cups of coconut milk, or soya if you prefer
- 1.5 tbsps honey
- 1 tsp vanilla extract
- A pinch of salt
- In a blender, add strawberries, bananas, and coconut milk (Soya if you like).
- Blend for 3mins or until smooth.
- Then add honey, vanilla, and salt.
- Blend again for 1 minute.
- Pour into a container and place in a freezer.
- Freeze it for 3-5 hours or overnight.
- Before serving, let soften on a counter for 10-20 minutes.
