Sometimes in life, we need to get back to basics, I love making cakes and I love icing them; that being said a cupcake recipe is always needed and that’s why I decided to make this vegan cupcakes recipe so that everyone can find it when they want to create something in the kitchen!

When I say easy I really do mean it, you literally have to throw everything into a bowl, mix it and you have your cake mix. Vegan cupcake recipes are everywhere but I won’t lie, some of them have very weird ingredients and I just like keeping it all basic and easy!

I love this easy vegan cupcake recipe, it takes 20 minutes in the oven and then you’re done and best of all if you have an electric stand mixer it means you won’t even need to mix the old fashion way! If you use silicone cupcake cases as well you’ll be able to reduce your paper waste, it’s worth the investment in the long run, after making these I purchased my own!

If you’re looking for an easy cupcake recipe this one is perfect. The great thing about it is that you can add any flavouring you want, with this one I’ve added peppermint and then decorated them with a nice chocolate buttercream to complement it.

Easy Vegan Cupcake Recipe

Ingredients
  

  • 200ml Soya Milk
  • 220g Vegan butter
  • 220g Castor Sugar
  • 2 tsp Vanillia Extract
  • 220g Self Raising Flour
  • 1 tsp Baking Powder

Instructions
 

  • Add all ingreidents into a mixing bowl, mix until smooth.
  • Add mix into a cupcake case, 2 thirds full.
  • Bake for 15 minutes or until golden brown.
  • Transfer onto a wire rack and leave to cool, then enjoy!
