I’ve been wanting to do something a little more savoury these days but still keep it yummy. That’s why I decided to do some yummy breakfast muffins and I will say these oat muffins are to die for! Breakfast muffins are something that I feel we can all get behind and this breakfast muffins recipe is perfect for anyone to follow.

If you’re wanting to know how to make breakfast muffins, my simple guide will help you with that. These are breakfast muffins healthy and so yummy. I made 12 and although they’re breakfast muffins I ate 5 that day, which shows how yummy they really are.

These blueberry muffins are great for a breakfast treat, a quick snack or just because you want to eat something. Although I’ve called them a breakfast muffin, doesn’t mean you can only eat them at breakfast!

When I was following slimming world I found that slimming world snacks were the most important thing for me because I wanted to eat all the time but never found any that worked. This is the perfect slimming world snack to enjoy and not feel guilty for!

These muffins are not only just incredible in taste but they’re also very low syn muffins and that’s what I love to hear! Each muffin is going to cost you 3 syns which I think we can all agree is amazing and so guilt-free! Remember syns always change and these were correct at the time of posting in March 2021.

Healthy Breakfast Muffin Recipe

This recipe is super easy, throw it in a bowl and bake it till you have amazing muffins. They last for a few days in an air-tight container although I would suggest having them the same day or next as they’re so good.

I’ve used paper muffin cases in this recipe as I had a few to use up although I’d always suggest using silicone muffin cases if you have some, they’re great and reduce waste!

Easy Breakfast Muffins

Ingredients
  

  • 225g Plain Flour
  • 2 Tsp Baking Powder
  • 110g Light Brown Sugar
  • 110g Berry Granola
  • 1 Egg
  • 120ml Sunflower Oil
  • 10g Oats
  • 200ml Soya Milk
  • 1 Banana
  • 1 tsp Vanilla Extract
  • 120g Blueberries

Instructions
 

  • Preheat the oven at 180c, line a cupcake tray with 12 paper or silicone muffin cases.
  • Mash the banana, mix all the ingredients in a bowl until you have a thick batter mixture.
  • Divide the mixture into the muffin cases, filling generously and decorate with oats. Bake for 25-30 minutes until well risen and lightly golden.
