Healthy Breakfast Muffin Recipe
This recipe is super easy, throw it in a bowl and bake it till you have amazing muffins. They last for a few days in an air-tight container although I would suggest having them the same day or next as they’re so good.
I’ve used paper muffin cases in this recipe as I had a few to use up although I’d always suggest using silicone muffin cases if you have some, they’re great and reduce waste!
Easy Breakfast Muffins
- 225g Plain Flour
- 2 Tsp Baking Powder
- 110g Light Brown Sugar
- 110g Berry Granola
- 1 Egg
- 120ml Sunflower Oil
- 10g Oats
- 200ml Soya Milk
- 1 Banana
- 1 tsp Vanilla Extract
- 120g Blueberries
- Preheat the oven at 180c, line a cupcake tray with 12 paper or silicone muffin cases.
- Mash the banana, mix all the ingredients in a bowl until you have a thick batter mixture.
- Divide the mixture into the muffin cases, filling generously and decorate with oats. Bake for 25-30 minutes until well risen and lightly golden.
