I’m a lover of tuna, let it be said. So when I thought of the basic tuna pasta I wanted to create something a little more fun. Something that could be made into a dinner and not just a side dish at BBQs or parties. I mean sure you can use tuna pasta as a quick dinner but this takes a little more time and care.
That being said, it’s not mega difficult to whip up and it’s Dairy free, Gluten Free and Egg free which means it’s free of all them pesky allergens! It taste amazing and it’s a treat for the whole family. If you wanted you could also easily make this recipe Dairy Free by just not adding the cheese on top, however I can’t say no to some melted cheese on pasta!
If you want you can play around with the recipe and add some other veggetables to give it that extra crunch but if you just follow the recipe below and you shouldn’t have a problem cooking up something yummy! You can serve this dish with something if you wish although there’s enough there that I don’t ever need anything else.
Crunchy Yummy Tuna & Vegetable Bake {Gluten Free, Egg Free & Nut Free}
Ingredients
- 2 Tins of tuna in spring water (or bring/sunflower oil if you prefer)
- 1 Diced onion
- 2 Red peppers
- 1 Tin of pasata or 1 tin of chopped tomatos
- 1 Tsp dried mixed herbs
- 1 Tin of sweetcorn
- 300g Gluten free pasta
Instructions
- Add the diced onion, pasata or chopped tomatos and 1 chopped pepper in a saucepan and simmer on a low heat, once heated add mixed herbs.
- While that simmers cook the pasta as per the instructions.
- In a casserole dish mix the pasta with the sauce and the other chopped pepper and cook for 10 minutes, after 5 minutes add the cheese to the top of the mixture so until it browns.
- Serve and enjoy.
