I love Christmas, as you might have guessed already! I will always have a soft spot for my vegan mince pie recipe however I love adding mincemeat into almost anything to make it have that Christmas punch. This mincemeat loaf cake recipe is 100% vegan, although as I always say; make sure everything you use is 100% vegan as brands like to change ingredients and not let people know!
This homemade loaf cake is the best thing to get you in the festive mood, I can’t get enough of Christmas recipes and vegan Christmas recipes are the best as everyone can enjoy them! I use this vegan mincemeat recipe that I found in all my recipes, I should really make my own but I’m too fixed on creating new recipes!

If you’re not a big fan of Christmas cake I have to say you might be swayed when it comes to this mincemeat cake and if you don’t like it, everyone else will for sure! This easy mincemeat cake will have you as everyone’s favourite at the office party or family get together, it’s a great twist on the normal Christmas pudding and it really is an easy mincemeat Christmas cake recipe!
This easy mincemeat loaf cake recipe is the perfect thing, it takes hardly any time to prep and you can leave it in the oven to bake while you get on with other stuff! I watched an episode of bake off while mine was baking!

What Equipment Is Needed For A Loaf Cake Recipe?
I’m not saying you’re going to need all this cooking equipment to make an amazing vegan festive cake, however, I am saying that it’ll make your life so much easier and a lot less stressful while baking!
Electric Mixer
Scales
Silicone baking tin
Wire rack
Silicone spatula
These are probably all bits that you already have in the kitchen, I can never say enough how great having silicone products in the kitchen is! Using my silicone baking tin means that I can easily get the Christmas loaf cake out and have no issues with it sticking! So just enjoy this east mincemeat fruit cake and enjoy the whole baking process.
Mincemeat Loaf Cake Recipe
Easy Christmas Mincemeat Loaf Cake Recipe
Notes
Use a silicone baking tray so it’s easier to get the Christmas loaf cake out once baked and cooled.
Ingredients
- 225g self-raising flour
- 140g butter
- 140g dark soft brown sugar
- 50ml soya milk
- 85g mixed fruit
- 450g mincemeat
- 2 tsb mixed spice
Instructions
- Preheat oven to 160 C.
- Put all ingredients into a bowl and mix thoroughly.
- Turn into the prepared tin, bake for 2 hours. (Check with skewer/cocktail stick to ensure it comes out clean). Leave in the tin for about 15 minutes then transfer to a wire rack to cool completely.
