Easy Gin & Tonic Cupcakes Recipe – Cranes Cranberry Gin Cupcakes Recipe

I LOVE gin and I have to say I’ve been experimenting loads with it at the moment and the one thing it tastes the best in, has to be cupcakes. Gin cupcakes are so fun to make, although you’ll need to be sure you don’t put in too much if you’re taking them into the office the next day! To make sure these amazing cupcakes were fit for work I decided to make them into a gin and tonic cupcake recipe.

The perfect gin is whatever you like in my opinion and I seem to like pretty much all gin. There are loads of flavours out there these days but I have to say I’m in love with the Crane’s cranberry gin and it’s so good in cake!

What You Need To Make Gin and Tonic Cupcakes

You will need a few things if you’re looking at making this easy gin and tonic cupcake recipe, you can do things by hand but it’s going to take a lot longer and I like my baking to be a little easier!

Cupcake Cases – If you’re going to make nice, big cupcakes then you’re going to need big cases because the little ones just won’t do. They’re also better for decorating cupcakes.

Electric Mixers – I can’t live without these, makes making buttercream so much easier, if you want an easy way to make buttercream use these and it’s so much better on time!

Cranes Gin – Again you can use whatever gin that you like in the best gin cupcake recipe around, which is this one. However, the Cranes gin has a great taste and I can’t stop using it so it’s my prefered choice.

Cake Piping Set – If you want the perfect pipe on top of your cupcakes then you need a cake pipe set and they’re super cheap although can be a pain to use, you’ll get the hang of it though!

Gin And Tonic Cupcakes Recipe

Ingredients
  

For the cakes

  • 175 g Butter
  • 175 g Self raising flour
  • 175 g Castor sugar
  • 2 Eggs
  • 3 tsp Gin
  • 3 tsp Tonic

For the icing

  • 380 g Icing sugar
  • 150 g Butter
  • 4 tsp Gin
  • 2 tsp Tonic

Instructions
 

For baking the cakes

  • Add all ingreidents into a mixing bowl and mix until well combined.
  • Add into cupcake cases, 2 thirds full so they have time to rise.
  • Bake for 25 minutes, once baked transfer to wire rack and cool completly.

For the buttercream icing

  • Use electric mixers to mix the butter and icing sugar until fluffy.
  • Add gin and tonic into the mixer and mix for a further 10 seconds.
  • Add buttercream to the pipe bag and pipe the buttercream onto the cakes however you want.

Notes

If you want it a little stronger, add a little more gin!
Use Cranes gin if you want a yummy flavour!
