This super easy banana bread recipe is going to make you smile! Not just because it’s easy to make but because it taste super yummy as well!! I don’t actually know anyone that doesn’t like banana bread? If you love it as much as me this dairy free and gluten free recipe is just what you need!
You can easily make the recipe egg free if you wanted although I’ve opted for the quicker option, with this recipe you can literally just chuck the ingridents into a mixer and then the oven! You do need to mash the bananas first and I use a handheld electric mixer after I’ve broken the bananas up a little.
As usual I sent the other half into work with the banana bread and it went down a treat! So if you’re looking for something to take into work on them baker days this would be perfect! It has no sugar as well so it’s a nice healthy option rather than a load of chocolate!
If you fancy making a couple of them just double the ingridents and obviously use two loaf tins! Enjoy!
Ingredients
- 4 ripe bananas
- 80g coconut oil melted
- 2 medium free range eggs
- 250g gluten-free self raising flour
- 2 tbsp dairy free milk
Instructions
- Blend or mash the bananas, then add the remaining ingredients and mix well.
- Place in a greased loaf tin and bake in a pre-heated oven at 180 degrees (160 fan, gas mark 4) for around 50 - 55 minutes until a skewer comes out clean.
- Leave to cool in the tin for around 10 minutes before putting onto a wire rack.
