Lemon Vegan Shortbread (Dairy Free, Gluten Free, Egg Free)

I love anything sweet, I have a sweet tooth and that’s not a bad thing! I was sat down one night and all I wanted was shortbread, until I realised I couldn’t really eat any due to the dairy; that’s when I thought of vegan shortbread. So I decided to make my own vegan recipe, to be fair it’s actually fairy simple and easy to make.

Vegan shortbread is amazing, I can eat as much as I want and enjoy it without consequences which is the best part. I’ve found that you can make so many flavours as well. I’ve seen a lot of vanilla ones and a couple strawberry (which I found a little strange) floating around the internet. However to me shortbread is either plain or lemon and that’s why I’ve made a lemon one!

I mean you can leave the lemon out and swap it for vanilla if you really want, it’s totally up to you. I just find the lemon gives it a kick and the zest brings out that after taste which is to die for. It annoys me when people say that vegan food is bland or boring, it isn’t people simply aren’t looking for the right recipes, the ones full of flavour and fun. Which is why I love trying out new recipes, I’m working on vegan unicorn cupcakes at the moment; not sure how they’re going to turn out but I’ll be sure to let you know!

If you’re going to make this devine shortbread then I’d suggest taking some into work and letting your colleagues enjoy them, while all the time being jelous of your amazing baking skills!
