I recently made a vegan victoria sponge cake and got in a right huff about the filling, I tried some whipped cream recipes that I found online several times and they just didn’t work. That’s when I wanted to make up a vegan buttercream to save the day and I’m so glad I did because it tastes amazing and just what the cake needed. The buttercream isn’t just perfect for a victoria sponge though, it’s so versatile and you can use it for almost everything!
Gin Vegan Buttercream
One thing I love about buttercream is you can make it into anything you like, which is why I added gin. The trick is to make sure it’s nice and smooth and use the right amount of flavouring otherwise it can be a little overpowering and doesn’t taste as nice, also make sure you add the gin or other flavouring after you’ve mixed the butter and icing sugar or it won’t work.

I love that this recipe is vegan, it’s easy to find vegetarian buttercream or vegetarian frosting in supermarkets but to find a vegan product can be a bit more difficult and a lot more expensive. This hardly costs anything compared to shop brought products and literally everyone can enjoy. I will say that you need to make sure all the ingredients are 100% vegan, I know that some products get their ingredients changed and some I used to use are no longer vegan which is a huge pain, so always double check if you’re unsure or reading an old recipe.
Tips To Make The Best Vegan Buttercream
The thing to remember when it comes to making a good vegan buttercream is the texture. It’s got to be very silky, smooth and also firm enough so that you can pipe it onto cakes. The key is to make sure that the vegan butter you use it top quality otherwise it won’t be as firm and it might split in the process.
If you add too much liquid into the mix then you’re going to also need to use more powdered sugar, so if you’re adding a flavouring liquid make sure you add more sugar so it’s firm and spreads easily.
Electric Stand Mixer – you’re going to need to make sure you have a decent pair of electric mixers as well, I’ve been using the same pair for almost 5 years now and I couldn’t recommend them enough.
Three Ingreident Vegan Buttercream Recipe
I love this recipe as you don’t need loads of recipes to make it, three ingredients and you’re ready to go. That being said you can have a plain vegan butter cream which then turns it into a 2 ingredient vegan buttercream recipe. This dairy free buttercream is to die for, it tastes so good and most of all I can enjoy it as I can’t have dairy. It’s perfect to spread on these basic vegan cupcakes.
If you want to make it into a vegan chocolate buttercream recipe just add some vegan cocoa powder until you get the colour you want. It tastes so good!
Vegan Buttercream Icing Recipe
- 500g Powdered Sugar
- 250g Butter
- 2 tsp Flavouring, your choice
- Add the vegan butter and powdered sugar into a bowl, mix with electric mixers till firm and smooth.
- Add flavouring if wanted and mix for a couple of minutes.
- Spread or pipe onto cakes.
