I love a victoria sponge cake, however, with the cream and dairy in it, I’m not able to have them, which is why I wanted to make my own vegan victoria sponge cake and I have to say it’s delicious! Who doesn’t love a classic victoria sponge? I’ve seen loads of victoria sponge recipe posts out there but hardly any vegan victoria sponge recipe posts out there so I found a few, changed them and made my own variation so I hope you like it.
Vegan Victoria Sponge Cake Recipe
I love that this recipe is vegan, it means most people can enjoy it and it goes down a bit of a treat in our household. You can change the cake around if you want as it’s a basic vegan victoria sponge, you could add chocolate or some flavours to give it a kick if you wanted to but I prefer a classic, stripped back sponge cake.
Egg Free Sponge Cake & Dairy Free Sponge Cake
I can’t have dairy and this vegan sponge cake doubles as a total dairy free sponge cake so I can eat as much as I like. The cream is also dairy free, it might not be to everyone’s liking but if you want dairy free whipped cream check it out. The vegan sponge cake recipe is also egg free, I hear people talk about how difficult it is to find an egg free sponge cake recipe but I have to say it’s not as difficult as I thought. If you want a diary free sponge cake, a vegan sponge cake and an egg free sponge cake, make this one!
This recipe isn’t gluten free. However, all you need to do is change a few of the ingredients to make a gluten free sponge cake, it won’t change the cake and it will still taste amazing. If you want a gluten free victoria sponge cake, it won’t be difficult to do.
I love cake, I can’t get enough of cake. I’ve made a few vegan cakes although I have to say this happens to be one of the best vegan cakes I’ve made and I’ll easily make it again. I’m looking at making some blueberry vegan muffins as well and I hope they go down a big treat as well. Vegan Victoria Sponge Cake Filling
There are various routes you can go down when filling your sponge cake. I prefer buttercream, it’s super easy to mix up and it tastes amazing with the cake. You can go down the whipped cream route but I find most recipes involve coconut which can be a huge pain to use and doesn’t hold it’s texture. I have the best vegan buttercream recipe for you, super easy and takes hardly anytime at all!
Vegan Victoria Sponge Recipe
- 150g Vegan butter
- 150ml Soya milk
- 300g Self Raising Flour
- 200g Golden Castor Sugar
- 4 tsp Vanilla Extract
- 1 tsp Bicarbionate Soda
- Heat oven to 180C/160C fan/gas 4. Line the bases of 2 x 20cm sandwich tins with dairy free spread and sprinkle with flour, remove excess flour.
- Add all ingreidents to a mixer and mix untill smooth.
- Pour the mix between two tins and then bake in the centre of the oven for 35-45 mins or until a skewer inserted into the middle of the cakes comes out clean. Leave them in their tins until cool enough to handle then carefully turn out onto wire rack.
